Ingredients:
1tbsp Olive Oil
2-3 Garlic, finely chopped
1 onion, chopped
2tbsp tomatoes, de-seeded & chopped
1 cup Arborio Rice
1 cup Vegetable Stock
Few basil leaves, chopped
Cheese, grated as per requirement
Method:
Add olive oil, garlic & onion in a pan and saute it till it turns golden brown.
Then add chopped tomatoes and give it a good mix.
Add the arborio rice, mix the ingredients well, and season with salt & pepper.
Add the vegetable stock little by little and let it cook for a while on low heat. Keep stirring gently in between.
Once the risotto is cooked take it off the heat and add the basil leaves. Give it a good gentle mix.
Add the grated cheese & season with salt and pepper and stir well.
Garnish with Basil Leaves.
Serve it hot! Enjoy!
