Uttapam Sandwich.🥪
Uttapam (aka Uttappa or Oothapam) is yet another healthy breakfast recipe from South Indian cuisine prepared with a common rice and urad dal batter used for preparing Idli and dosa. However, unlike Dosa, Uttapam is little thicker and is topped with different types of veggies like onion, tomato, capsicum, carrot, green chilli, sweet corn etc. which makes it even more healthier and tastier. Today we are to make uttapa with a difference!!
This is super healthy kids special sandwich Uttapam with cheese filled center, A must try recipe ❤️

|Uttapam Sandwich|

Ingredients:
For making the batter:
3 cups of Suji
3 cups of curd
1 ½ cups of water
For tempering the batter:
5 ml oil
3 tsp of urad dal
2 tsp of mustard seeds
3 tsp of chana dal
3 tsp of finely chopped fresh coconut
3 table spoons of chopped curry leaves
Salt to taste
1 tsp of oil
¼ tsp of edible soda/1 eno
1 cup of spinach paste (blanched in hot water and paste)
For topping:
1 chopped onion
1 chopped tomato
2 tsp of coriander leaves
1 chopped carrot
Salt to taste
Chopped green chillies
For Shallow fry:
Refined Oil as required
Cheese slices

Method:

Take a mixing bowl , add suji, curd and water, mix it well and rest it for 1-2 hrs. Take a pan add oil, mustard seeds, urad dal, chana dal, chopped coconut chopped curry leaves and fry until the nice aroma comes out. Mix everything in the batter.
Take all the vegetables (onion, tomato, carrot, coriander leaves, capsicum) add salt to taste and mix well together.
Now In a different bowl take half of the batter (other half I will be using for some other recipes) add spinach paste mix well, Now add edible soda/fruit salt (you can take a small bowl add oil and mix edible soda and then mix with the batter). ENO can be used- If you are using ENO then it will be 1 packet. Add salt to taste.
Now take a frying pan, grease the pan with oil, wipe the oil with a tissue paper, Now in a small quantity pour the batter top up with vegetables, add chopped green chillies, apply oil and shallow fry both the sides.
Now apply cheese slice in between two uttapam and cut it into sandwich shape.
Serve for 3-4
Duration- 30-40 mins approx…
