The dressing recipe is from page 163 of A Taste of Well-Being :

Classic lemon juice and Olive Oil Dressing
2 lemons
1/4 cup olive oil
Black pepper, coarsely ground, to taste
Salt to taste
Modification: to mak eit more Greek, add oregano and even a little feta cheese.

Note: for the salad, you can omit the onions or any other veg if desired…
Sugested: salad greens, zucchini, squash, fried fruits and nuts.
