This is not an egg IN a bagel, but an egg in a bagel HOLE. I saw the recipe on the fantastic website Food52 and had to try it. Simply cut a bagel in half and then melt a knob of butter in a frying pan – with a lid – over a medium heat and when sizzling, put the bagel – cut side down – on the bottom. After about 30 seconds, crack an egg in the middle of the bagel. In other words in the HOLE. I crack my egg in a little jug first as this way it is easier to pour in. Allow to briefly cook before turning the heat down and popping a lid on the pan. Cook for 3m or until cooked through. And eat. My children love this with HP sauce.
