Pudla or puda as we North Indians call it, it’s called by different names, also called as veg omelette some times. It is a quick snack prepared with gram flour (besan) and is healthy and easy to cook.
This version is one I has seen on the steers of Gujarat. You can opt to add any veggies inside the filling, I had capsicum, Beets, tomatoes, onions and cabbage. You could go with boiled potatoes, beans, corn or any veggies you like.
You can use any bread, if bread is not available you could just make the pudla and stuff veggies inside, that also works!
I have added a little cheese as I wanted to have something cheesy but still healthy, you could opt to not use cheese at all, if you have some home made paneer, you could grate that too inside!
