Serves: 2

Ingredients

Quinoa – 1 cup
Coconut milk – 2 cups
Oil – 1 Tbsp
Desi Ghee – 1 Tbsp
Ginger garlic paste – 1 Tbsp
Dried red chilli – 2 qty
Cashew – ½ cup

Vegetables

Potato – 1 qty
Carrot – 1 qty
Onion – 1 qty
Peas – ½ cup

Spices

Bay leaves (Tej Patta) – 2 qty
Caraway seeds (Shahjeera) – ½ Tbsp
Star anise (Chakra Phool) – 2 qty
Kopak buds (Marathi Moggu) – 2 qty
Cloves (Laung) – 3 qty
Cardamom (Elaichi) – 2 qty
Cinnamon stick (Daalacheenee) – 1 inch
Nutmeg (Jaayaphal) – a pinch

Recipe
1. Soak quinoa in water for half an hour.
2. Add 1 Tbsp oil + 1 Tbsp desi ghee in cooking vessel.
3. Add all spices and sauté for a minute.
4. Add all vegetables and sauté for 1 minute.
5. Add quinoa and sauté for 1 minute.
6. Add 1 Tbsp ginger garlic paste.
7. Sauté for 2 minutes.
8. Add coconut milk and mix well.
9. Cook for 15 minutes on low flame with a lid.

Healthy Quinoa pulao is ready. Serve this yummy dish with homemade yogurt.
