Beetroot Poriyal is one of the tasty yet very healthy recipes from South India. Beetroot is rich in iron and vitamins, plus we add chana dal which is protein rich. So this recipe is fully packed with healthy vitamins and nutrients one could ask for. That is why it makes a great part of your weight loss recipes which should also be vegan weight loss recipe. Poriyal in Tamil means fried or sauteed. In poriyal chopped vegetables are mixed with spices, and grated coconut and stir fried. You could also call it beetroot palya or thoran or sabzi.

To prepare this beetroot curry we fry peeled and chopped beetroot with onionsand spices. Finally add some grated coconut and top it with coriander leaves. If your kids don’t like beetroot try this recipe, as they are going to love it just like my toddler does! Serve it with chapati or with rice with side of sambar on the side.
