Polenta:

Soft polenta
ingredients
1 Cup Polenta
3 cups vegetable stock or broth
1 teaspoon garlic
1/4 dice onions
1 tablespoon vegan parmesan cheese
Optional: 1/2 tsp salt

Instructions:
In a medium size pot on medium heat Add in the olive oil and cooked onions until they are translucent.
Add garlic and cook for 1 to 2 minutes.
Pour in stock and bring to a boil.
Pour in the cornmeal while continuously stirring turn the heat on low.
Stir until polenta is al dente or soft.
This should take about 15-20 minutes.
Finish off the polenta by stirring in your vegan Parmesan cheese or butter.
Add salt and pepper if so desire continue to stir until everything is well combined.
Cook for another 5 to 10 minutes .
