I know how hard it is to prepare healthy meals daily specially for someone like me who has other life responsibilities.
I get it ! You do not want to spend more than 30 minutes fixing dinner for single you or your large family. You come home after long hours of work and commute and preparing dinner is the last thing you want to think about . Or simply , you don’t want to spend all of your Saturday cooking and prepping food for the week ahead!
That is why I created this YouTube channel.
Here you find easy recipes for healthy meals you can prepare in less than 30 minutes.
Whether you are single and want to cook for one or you have picky kids who wouldn’t eat anything healthy , You won’t be disappointed.
All of my recipes keep myplate.gov recommendation in mind.

Lamb chops w/ couscous salad
Recipe is available below for easy reference
A. Couscous Salad ⁃
– Boil 1 cup of water in a medium size pat
⁃ Add pinch of salt and 2 Tbsp of olive oil
⁃ Add 1 cup couscous , stir and cover pan
⁃ Simmer for 10 minutes until cooked
⁃ Add vegetables chopped in small size: bell peppers, tomatoes, cucumbers, olives & red onion
⁃ Add finely chopped cilantro , mint, chickpeas and feta cheese
⁃ Finish up w/ dressing made with lemon zest, lemon juice, olive oil ,pinch of salt & black pepper
B. Lamb chops
⁃ Remove excess fat from the meat
⁃ season Lamb chops with salt, black pepper, garlic and fresh rosemary
⁃ Heat iron-cast skillet
⁃ Cook meat until inner temp 165

I ( Dr. Meseret) am a medical doctor practicing Pediatrics. As a busy mother with full time job, family responsibility , attending school and juggling other social obligations, I understand first hand how hard it could be to put healthy dinner on table every night! However I see the unfortunate reality of rising childhood obesity in my practice. Preparing healthy food doesn’t have to be time consuming . By sharing my personal cooking experience from my home kitchen , I want to encourage you that it is doable!
