Low Cal and Healthy Wheat flour Zucchini Bread

This moist, nutty bread is a terrific way to use up late-summer zucchini. The walnuts in the bread are super-heart-healthy, and the yogurt adds moisture without any fat. This walnut zucchini bread spiced with cinnamon is super easy to make.
Perfectly ideal for a weekend brunch.

Preparation time – 30 minutes
Cooking time – 50 minutes
Total time – 80 minutes

Ingredients
2 1/2 cup Whole wheat flour
3 cups Shredded Zucchini
4 Eggs
1 cup Brown sugar
1/2 cup Milk
2/3 cup Coconut oil – Adds flavor
2tsp Baking soda
2tsp Vanilla essence
1tsp Salt
1 cup Walnuts chopped
2tsp Cinnamon powder

Method
1. Preheat oven at 350 degree Fahrenheit.
2. Grease 9 inch Bread baking tray, with oil.
3. Mix dry ingredients – salt, baking soda, cinnamon powder, brown sugar.
4. Mix wet ingredients – egg, oil, milk, vanilla essence. Whisk together.
5. Now add mixture of dry ingredients and whisk well
6. Add in flour in parts and combine.
7. Add shredded Zucchini and 1/2 of chopped walnuts.
8. Stir well.
9. Pour the bread batter into the greased tray and top it with remaining walnuts.
10. Bake in preheated oven for 50 minutes.
11. To check the bread is baked properly, insert knife or toothpick. It should come out clean.
12. Let it cool down completely.
13. Remove on plate and cut into slices.
14. Enjoy with evening tea or coffee.
