500 g boneless chicken thighs, cut into strips
200 g broccoli florets
2 tbsp minced garlic
1 tbsp minced ginger
100 g cashews
2 tbsp Oyster sauce
2 tbsp red chilli sauce/Schezwan sauce
2 tbsp Thai sweet chilli sauce
2 tbsp dark soy sauce
3 tbsp vegetable oil (for frying the chicken)
2 tbsp vegetable oil (for final curry)
Salt to taste
1 tsp freshly crushed black pepper powder
