Tender, flavorful vegan meatballs made with chickpea and vegetables. Infused with herbs and spices for big flavor. The perfect meatless meatball for pasta, sandwiches, appetizers and more…We like more of a crunchy, dry meatball so these are baked in the oven without sauce and used tahini sauce for dipping.

1/2 cup chickpeas (soaked for 4 hours)
1 tablespoon Oil
4 cloves Garlic, pounded
1 cup Onion, finely chopped
1 cup Green or red bell pepper (capsicum), finely chopped
1/2 cup Frozen Sweet corn kernels OR fresh
1/2 cup Frozen Green peas OR fresh
2 cups chopped Spinach
2 cups shredded Cabbage
1/2 cup shredded Carrot
1/2 teaspoon Red chili flakes
1 teaspoon Italian seasoning (optional)
1/2 teaspoon turmeric powder
1 teaspoon salt
1 teaspoon black pepper powder
3 sprigs coriander leaves (cilantro) , chopped
