FULL RECIPE:

• DRY INGREDIENTS:
• – ½ cup oats (processed into flour)
• – ½ cup oats (left whole)
• – ¼ tsp cinnamon
• – ½ tsp baking powder
• – 1-2 TB SP mini vegan chocolate chips optional (I use Enjoy Life brand)
• WET INGREDIENTS:
• – ½ cup mashed bananas (about 1-2 ripe bananas)
• – ½ tsp vanilla
• – 2 TBSP pure maple syrup

INSTRUCTIONS:
1 Pre heat the oven at 360 degrees F and line a baking sheet with parchment paper.
2 Add ½ cup oats to a food processor and process until it looks like flour, it doesn’t neet to be perfect a little texture is fine.
3 In a large bowl add the flour as well as the rest of the dry ingredients (except the chocolate chips) and mix.
4 In a separate small bowl mash your bananas and measure it out to ½ cup.
5 Add mashed bananas and the rest of the wet ingredients to the bowl of dry ingredients and mix everything until well combined.
6 Fold in chocolate chips.
7 Using a spoon, scoop out the mixture into blobs on the lined cookie sheet and use the back of the spoon to shape a round cookie, repeat until the mixture is all gone.
8 Place in the oven for 12 minutes and then let cool completely on the pan. (about 10-15 minutes)
9 Store in a sealed container for 2-3 days.
