Ingredients
Bok choy 1 bunch thinly chopped
Carrots julienne cut 2
Onions finely sliced 1
Cucumbers julienne cut 2
Apples finely sliced 1
Grape tomatoes 8-10 cut in halves
Raw peanuts – roasted 1/4-1/2 cup
Raisins 1/4 cup

Dressing
Olive oil 1/4 cup
Mustard sauce 1 tsp
Rice vinegar 1 tsp
Sesame oil 1 tsp
Honey 1 tsp

Method.
Add all the vegetables and fruits to a big bowl.
Prepare the dressing by mixing all the ingredients
Pour the dressing over the salad. Toss well
