I peeled my sweet potatoes, diced, seasoned with salt, pepper, olive oil and roasted in oven until tender. Cooled and transferred to a bowl. Then added the rest of the ingredients. You can bake your sweet potatoes ahead of time, store and use for the salad later. Olive oil, lemon juice are used for the dressing and the salad is without mayo.
