Railway Canteen Veg Cutlet | Tasty cutlet recipe | Party Snack | Healthy food for kids

Most popular dish on the Indian Railways canteen menu is the tasty crispy vegetable cutlet. Veg cutlets are an intrinsic part of train journeys in India. These vegetable cutlets are crumbed, deep fried patties made of potato,
carrots, french beans, beet and peas, 2 pieces to a plate, accompanied by a sachet of ketchup, and two slices of bread.

Preparation time – 10 minutes
Cooling time – 30 minutes
Cooking time – 15 minutes
Total time – 55 minutes

Ingredient
1 tbsp Ginger, finely chopped
1/2 tsp Garam masala
1/2 tsp Amchur
1 tsp Red Chili Powder
1 tbsp Green Chilies, finely chopped
Salt to taste
1/4 cup French Beans, finely chopped
1/2 cup Carrot, finely chopped
1/4 cup Green Peas
1/4 cup Coriander, finely chopped
1/2 cup Beetroot, finely chopped
2 tbsp All purpose flour
1 cup Bread crumbs
5 medium Potatoes, boiled, peeled and mashed

Method

1. Heat 1tbsp oil in a pan, add finely chopped ginger and green chilies.
2. Sauté for few seconds, on medium heat.
3. Add finely chopped french beans, carrots, beetroot and green peas. Cook for 6 to 8 minutes.
4. Add red chili powder, amchur, garam masala, salt to taste and coriander.
5. Combine well and cook till all veggies are soft but not mushy.
6. Turn off flame. Add boiled and mashed potatoes and 1/4 cup white or brown bread crumbs.
7. Mix altogether.
8. Remove in a bowl and refrigerate it for 30 minutes.
9. Prepare a thin batter of all purpose flour and water. Keep it aside.
10. After 30 minutes, take out cutlet mixture from refrigerator.
11. Take some portion of mixture and make pattie of any shape and size of your choice. Prepare patties with remaining mixture.
12. Now dip a pattie in batter first and then coat it with bread crumbs.
13. Do this to all patties.
14. In a pan, heat 2tbsp oil. Place 3 or 4 patties.
15. Fry till golden brown. Then flip to the other side and cook till crisps.
16. Remove in a plate. Serve as tea time snack with bread and ketchup.

Pro Tips:

1. Mixing bread crumbs in pattie mixture will soak all moisture.
2. Preferably use fresh slice bread crumbs than toasted bread crumbs.
3. Keeping mixture in refrigerator will help in making pattie firm.
