Ingredients:

Quinoa -1 cup
Cinnamon – a small piece
Cloves – 4
Cardamom – 2
Bay leaf – 1
Ginger – an inch
Garlic – 4 cloves
Green chili – 1
Onion – 1
Tomatoes – 2
Green peas – ⅓ cup
Turmeric powder – ¼ tsp
Chili powder – 1 tsp
Coriander powder – ½ tsp
Coriander leaves – few
Mint leaves – few
Water – 1 ¾ cups

Method:

Mince a small piece of cinnamon, 2 cloves, ginger, garlic and green chili together using a mortar and pestle.
Heat a pan, add 2 tbsp of oil and a tbsp of ghee. Once it is hot, add a small piece of cinnamon, 2 cloves, cardamoms, bay leaf and let them splutter. Add sliced onion and saute until translucent. Add dried green peas soaked overnight and saute for a minute. Add the minced ginger garlic and stir for a minute. Add chopped tomatoes and mix until mushy. Add the masala powders and saute for a minute. Add coriander and mint leaves and stir. Add 2 cups of water, salt to taste and bring it to a boil. Add the washed quinoa to the pan, give it a stir, bring the flame to medium low, cover and cook for 20-25 minutes until all the water is evaporated.
