I hope everyone is having a wonderful week! I’ve already been in the Fall Spirit and craving all things Pumpkin! Here is asuper easy recipe for Pumpkin Loaf. I made mine in mini loaf pans.

Mini Pumpkin Loaf:
Pre heat ove at 350 F
Dry Ingredients:
2 cups brown rice flour
1 tsp baking soda
1/2 tsp baking powder
1/4 cup quinoa flakes
1/3 cup coconut sugar
1/2 tsp ginger & nutmeg
1 tbp cinnamon
1/4 cup raw pumpkin seeds
1/3 cup walnuts
Wet Ingredients:
1/3 – 1/2 cup almond milk
2 flax eggs
1/4 cup pure maple syrup
1 1/4 cup pumpkin puree
Add the Wet ingredients into the dry and combine well. Add to loaf pans and bake at 350 F for 30 minutes. Add more time if your doing one big loaf instead.
