Welcome to my channel ! My name is Leanne I have a huge passion in cooking & baking healthy recipes. I’m sharing a healthy dinner recipe you might want to try yourself. In this video I’m going to show you how to make a healthy dish ‘Chicken & Couscous’.

Ingredients

14x skinless chicken thighs
400g couscous
1x courgette
1x red pepper
5x small onions
8 cloves of garlic
1-2 tbsp olive oil or coconut oil
2 tbsp soy sauce
2 tbsp dunns river all purpose seasoning
2 tbsp paprika
1-2 tbsp italian seasoning
dried parsley
1/4 tsp sea salt
1/2 tsp black pepper
1x chicken or vegetable stock cube with 600ml of hot water

Recipe

1. Place a large pot on the hob, turn the temperature to moderate to high heat.
2. While the pot is heating up, season the chicken with Dunns river all purpose seasoning, paprika & 2 tbsp soy sauce & then stir all together
3. Once the pot is hot, place the chicken inside to brown for 2 minutes on each side.
4. While the chicken is browning, start chopping the onions, garlic, courgette & peppers.
5. When the chicken has finished browning take them out of the pot & place in a bowl on one side.
6. Pour in 1 tbsp of olive oil in the pot, then add the onions & garlic, then stir all together and let them saute.
7. Then add in the courgette & peppers and give a good stir.
8. Add the stock cube with 600ml of hot water & stir all together.
9. Add more seasoning 2 tbsp of all purpose & paprika then mix in.
10. Place the chicken in the pot, then add parsley, black pepper & sea salt.
11. Put the lid on the pot, leave to cook 45-50 minutes.
12. Once the chicken is cooked, take out & place them in a bowl on one side.
13. Add 400g of couscous in the mixture,(add more liquid if needed) give it a stir & let it cook for 4-5 minutes.
14. Then use your fork to fluff up the couscous and place the chicken on top. Ready to serve.. Enjoy!!
