karela is also known as Bitter gourd or Bitter melon . It is good for digestion due to its rich fiber property. It is popular ingredient in many asian countries and made in so many ways .Here I made with very simple ingredients , in my way like crispy karela ..named karela Bhurji which you can eat any time like lunch or dinner with roti ,chapati or as your preference.

Ingredients_______________
karela(Bitter gourd)-1/2 kg
oil-3-4-tsp
chilly-2
Garlic-7-8 cloves (chopped)
cumin seeds-1/4 tsp
onion seeds(kalonji) -1/2 tsp
Fenugreek seeds -1/4 tsp
mustard seeds-1/4 tsp
asafoetida 1/4 tsp
Turmeric powder-1/2 tsp
coriander powder -1tbsp
salt-1/2 (to taste)
lemon or aamchoor (dry mango) powder-1/2tsp(optional)
coriander leaves-to garnish
steps-
First wash karela and chop into equal quaters..in fine size not thick.
leave it for 1/2 an hour in salted water to remove it’s bitter taste.
After that squeeze it and keep it aside.
Now heat the pan and oil in it .
Add all seeds ,splutter them.
Then add chilli and garlic. Saute and let them little brown. Add now asafoetida.
Now add all chopped karela and mix well & cook on high flame . don’t leave it unattended to avoid it from burn.
Now add spices and salt, mix well them..
Cover the lid on low flame .
to make it crispy, after some time open lid and cook it on very low flame for some time & let it brown.
as per you taste you can add dry mango powder or you can skip.
At last garnish with coriander leaves.
