Recipe for 6 Sandwiches
Sanwich1: Avocado & Egg

Prep time: 5 mins
Cooking time: 12 mins (boiling eggs)
Serves: 1-2
Ingredients
Avocado slices
Hard boiled eggs-2
Extra virgin olive oil- 1Tbsp
Lemon juice- 1 Tbsp
Salt and black pepper to taste
Tomato slices
Lettuce leaf
Toasted bread slices ( toasted in fat free butter)- 2
Assembling sandwich:
Chop hard boiled eggs into small cubes add extra virgin olive oil, salt and black pepper, mix well and keep aside for later use.
Take two toasted bread slices, firstly arrange avocado slices, pour lemon juice on avocado slices. Now spread egg mixture evenly and now add tomato slices, sprinkle salt and black pepper and round it up with a fresh lettuce leaf and cover with another toasted bread slice.

Sanwich2: Avocado & Veggie

Serves: 1
Ingredients
Avocado slices
Bell pepper- red & yellow, sliced
Cucumber- slices
Lemon juice- 1 Tbsp
Salt and black pepper to taste
Tomato slices
Cheddar cheese
Toasted bread slices ( toasted in fat free butter)- 2
Assembling sandwich:
Take two toasted bread slices, spread avocado slices and then add some bell pepper slices, now add cucumber and tomato slices and sprinkle lemon juice, salt and black pepper on top of it. On the other slice spread cheddar cheese evenly and round up the sandwich.

Sanwich3: Beans & Veggie

Serves: 1
Ingredients
Baked beans- 2Tbsp, mashed ( I am using Heinz baked beans in tomato sauce)
Avocado- sliced
Cucumber- slices
Onion- slices
Lemon juice- 1 Tbsp
Salt and black pepper to taste
Tomato slices
Lettuce leaf
Toasted bread slices ( toasted in fat free butter)- 2
Assembling sandwich:
Take two toasted bread slices, add avocado slices & top it with mashed baked beans, sprinkle a tbsp lemon juice, salt and black pepper, now add cucumber, onion and tomato slices , now round it up with a lettuce leaf.

Sanwich4: Spinach & Egg sandwich

Cooking time: 12 min (boiling eggs)
Serves: 1
Ingredients
Baby spinach
Cucumber- slices
Hard boiled egg-1
Lemon juice- 1 Tbsp
Salt and black pepper to taste
Bell pepper- Red & Yellow, sliced
Toasted bread slices ( toasted in fat free butter)- 2
Assembling sandwich:
Take two toasted bread slices, assemble baby spinach leaves, now add boiled egg slices, bell pepper and cucumber slices on it, sprinkle lemon juice, salt and black pepper and round it up with other slice.

Sanwich5: Spinach & Avocado sandwich

Prep time: 5 mins
Cooking time: none
Serves: 1
Ingredients
Baby spinach 8-10
Mashed avocado- 1/2
Tomato slices
Lemon juice- 1 Tbsp
Salt and black pepper to taste
Extra virgin olive oil- 1Tbsp
Feta cheese
Toasted bread slices ( toasted in fat free butter)- 2
Assembling sandwich:
In a bowl mash ½ avocado, add lemon juice, salt and black pepper and extra virgin olive oil, mix well and keep for later use.
Now take two toasted bread slices, spread evenly avocado mixture, top it with spinach leaves, tomato slices and now sprinkle salt and black pepper and finish it with sprinkling feta cheese and put another slice on top.

Sandwich 6: Tofu sandwich

Cooking time: none
Serves: 1
Ingredients
Tofu slice
Bell pepper – Red & yellow, slices
Tomato slices
Cucumber slices
Lettuce
Low fat Mayonnaise( optional)
Toasted bread slices ( toasted in fat free butter)- 2
Assembling sandwich:
Take two toasted bread slices, add a slice of Tofu, bell pepper, cucumber and tomato. Now sprinkle Salt, black pepper and spread low fat mayonnaise ( or you can just add lemon juice) top it up with a lettuce leaf and cover with another slice of bread.

TIP: 1.You can use any bread of your choice, I have used multigrain bread or brown bread.
2.Using any kind of dressing is optional, or instead you can use lemon juice.
3. You can also wrap these sandwich and store for later use or eat them during breakfast, lunch or dinner, or while travelling. But since we are using avocado and boiled eggs don’t store it for more than 1day.
