HEALTHY BLUEBERRY MUFFIN RECIPE
(makes 1 mug muffin)
Ingredients:
1 tbsp maple syrup, honey or agave
1 tbsp milk of your choice
1 tbsp ricotta cheese
1 tbsp unsweetened applesauce
1/4 cup + 1 tbsp ground oats or oat flour (30g)
1/2 tsp baking powder
2-3 tbsp blueberries (30g)

NUTRITIONAL INFO (per muffin):
202 calories, fat 2.8g, carb 40.2g, protein 5.9g

Preparation:
In a coffee mug, add the sweetener, milk, ricotta cheese and applesauce, and mix using a fork until ricotta cheese is mixed in.

In small bowl, add the ground oats and baking powder, and mix together.

Add the dry ingredients into the mug and mix until a smooth batter is formed. Make sure there are no lumps on the bottom of the mug.

Sprinkle the blueberries on top and press into the batter.

Microwave on high for 1 to 1.5 minutes, which really depends on your microwave.

Let it cool for 5 minutes, then dig in.
