Easy Teriyaki Stir-Fry

Makes 6 servings
Stir-fry meals are already quick and easy, but sometimes even prepping vegetables is more than you have time for. Luckily, frozen vegetables are perfect for stir-fry, and they don’t even need to be defrosted. Garlic Teriyaki Beef Skirt Steak is savory and tender in this recipe, but you can also marinated tofu, chicken, or shrimp in this recipe, if you prefer.

1 tablespoon canola oil
1 lb Garlic Teriyaki Beef Skirt Steak, thinly sliced
1 cup frozen pineapple
1 (16 oz) package stir-fry blend frozen vegetables
1 (20 oz) package frozen brown rice, prepared according to directions

1. Heat oil in a large skillet or wok over high heat. Add steak and cook, stirring frequently, until browned all over, about 5 minutes. Transfer to a plate and set aside.
2. To the same pan, add vegetables and pineapple, and cook, stirring frequently, until warmed through, about 4 minutes. Add sauce and reserved steak, and cook, stirring frequently, until warmed through, about 3 minutes.
3. Serve in bowls over rice.
