INGREDIENTS
THAI PEANUT SALAD
Ingredients: serves 2
½ cup green capsicum, thinly sliced
½ cup cucumber, thinly sliced
½ cup deseeded tomato, thinly sliced
½ cup purple cabbage, thinly sliced
¼ cup chopped spring onions whites and greens
¼ cup coriander chopped
¼ cup roasted peanuts, roughly chopped
1 tbsp toasted sesame seeds
For the dressing
1 tbsp soy sauce
2 tsp sesame oil
1 ½ tbsp lime juice
½ tbsp olive oil
2 tbsp jaggery
½ tsp minced garlic
Method:
Place all the chopped salad vegetables into a large mixing bowl.Mix all the dressing ingredients in a small bowl and check the seasoning.Add the dressing to the salad vegetables and mix well. Garnish the salad with coriander, peanuts and tossed sesame seeds.
