Ok so here is the recipe video for that delicious corn salad I served with the pan crisped salmon. I LOVE corn so it’s unfortunate that most of the fresh corn on the cob here is genetically modified. So, I just use frozen organic sweet corn. Do give this a shot and let me know what you think. Catch you in the next one.

2-3 cups sweet corn kernels (raw or roasted)
1/2 medium cucumber (about 1 cup chopped)
1 Roma tomato, seeded and diced
1/4 small red onion or 2 sprigs green onion
Chopped parsley (about 1/4 cup)
1 small jalapeno
1/2 red bell pepper
1/2 avocado
Feta cheese (optional)
1/2 of a lemon, juiced
2 Tbsps olive oil
Salt & black pepper (1/2 tsp each)
