(This recipe serve for 2 person)
just double the quantity if you love
to cook more

Ingredients

3 medium red capsicum

1/2 cup risotto rice
1/3 cup vegetarian minched
2 lemons juice (squeezed)
1 small chopped onion
1 clove garlic
1 small tomato chopped
1 tablespoon mint chopped
2 tablespoons coriander chopped
1 tablespoon tomato paste

Base:
Round sliced lemons
Round sliced carrots

Splices :
1/4 tspn paprika
1/4 tspn chilli flakes
1/4 tspn cinnamon powder
1/4 tspn cumin powder
1/4 tspn salt
1/4 tspn ground black pepper
1/4 tspn thyme
1/4 tspn oregano

Liquid sauce :
2 lemons squeezed
1/3 cup olive oil
1/2 cup water

* wash and chopped onion ,garlic,
coriander leaves and mint.

* squeezed 2 lemons and keep the
lemon rind

* wash and cut cupsicum just enough
to take out the seeds.

* wash and soak rice with hot water
for about 10-15 mins after then
drain the water

* sauté onion and garlic , tomato until
aroma smelled, add the rice,keep on
mixing then add the minched

* add the tomato paste and spices
keep on mixing over slow fire

* add 2 tablespoons lemons juice
for the taste but make sure not to
over cook the rice

* set aside the rice mixture to cool
down

* stuffed capsicum with rice mixture

* arrange the sliced lemon and carrot
at the bottom of the pot

* properly arranged capsicum over it

* cook over stove and now pour over
the water,olive oil,and lemon juice.

* cover with small plate or any pot
cover on top to hold the capsicum

* simmer for about 40 minutes.

* transfer into a serving dish

* enjoy
