#Winter melon Curry / Ash Gourd
This is a very simple, #healthyrecipes and uses very few ingredients and I will show you in this video #howto cook. Ash Gourd Curry is a great accompaniment for rice, chapati or roti and very healthy too. It is very nutritious and has many health benefits. This curry is best for hot summer lunches.

This vegetable is unique to India, parts of South East Asia and China. It grows on a vine and a mature gourd is pale gray in color, coated in distinctive white ash. Because of this ash, this gourd/melon is known as ash gourd. The flesh of the melon is thick, firm and white with many small seeds. It is interesting to note that although it is called a melon, the flesh is not sweet.

Energetically and medicinally, winter melon has a cooling effect. This is perhaps another reason why it’s called winter melon – because it gives off the energy of winter. It is medicine to highly pitta people with pitta problems in the summer. Winter melon is inherently tridoshic.
