It turns out that Healthy doesn’t mean boring, and Gluten Free doesn’t mean dry! These Healthy(ish) Banana Breakfast Muffins are both Moist and Flavourful as well as being packed full of fibre, nutrients and other goodies to set you up for the day. This recipe has NO refined sugar and instead uses coconut sugar, apples and bananas to sweeten them. As well as being Gluten Free it’s also Dairy Free so its a WIN for all the dietary needs!

For 12 Cupcake sized Muffins
Preheat Oven to 170C
100g Coconut Sugar (or caster sugar)
100g Coconut Oil (or melted butter or vegetable oil)
3 tbsp Apple Sauce (bramley apples and some lemon juice)
2 tbsp oat milk (or buttermilk)
½ tsp Vanilla
1 Egg
2 Medium sized RIPE Bananas
190g Buckwheat Flour (or Plain Flour)
1 tsp Cinnamon
½ tsp Ginger
½ tsp Salt
1 tsp Bicarbonate of Soda
1.5tsp Baking Powder
50g Chopped Nuts (we used walnuts and pecans)
Mixed Seeds and Nuts for topping
