Recipe: Amritsari kulcha

Ingredients of Amritsari Kulche

• Maida – 2cups
• Salt – 2tsp
• Boiled potato – 2-3nos
• Crumbled paneer – 2tbsp
• Chopped onion – ½ cup
• Chopped ginger – 1tsp
• Chopped green chili – 1tsp
• Chopped coriander – 2tbsp
• Anardana powder – 2tsp
• Ajwain – 1tsp
• Dried mango powder – 2tsp
• Red chili powder – 1tsp
• Roasted cumin powder – 1tsp
• Chopped mint – 1tbsp
• Ghee – 2 tbsp
• Kalongi – ½ tsp
• Butter – 1tsp

Method of Amritsari Kulche

• First take the bowl in that add Maida, salt, water knead the medium-soft dough of that for kulcha and give nice oil massage to the dough and kept it aside for resting.
• In one bowl add boiled potato, crumbled paneer, chopped onion, chopped ginger, chopped green chili, chopped coriander, anardana powder, ajwain, dried mango powder, red chili powder, roasted cumin powder, chopped mint and mix well all this together to make nice crunchy mixer for kulcha.
• Now take the dough and start rolling once you make sheet then apply 1tbsp ghee then make a fold and again apply ½ tbsp ghee and do this step again.
• Now make finally roll without ghee then make their small balls and stuff the mixer which we had made.
• Apply oil, kalonji and coriander on top of roll which we had made adding stuffing then roll it again, now apply water at one side and cook on roti pan and do pan upside down to flame to get tandoor look and texture to kulcha.
• Once kulcha is done and top it up with butter and have with chole, chutney.
