Perfect for a quick vegan lunch for kids and adults; seriously, 10 minutes is all it takes! I was missing egg salad so I pondered how to make egg salad without eggs. Since I know how to use tofu know, the answer was simple. Black salt and firm tofu! This is the simplest recipe for how to make vegan egg salad pop with flavor. But I didn’t want to stop there, I also wanted to come up with a vegan tuna salad recipe. I have seen this be done with chickpeas, so I figured I could come up with a basic on the go recipe of how to make tuna with chickpeas. This vegan tuna salad recipe is delicious and could be modified to make it more “fishy” if desired. These salads are also great for plant based meal prep lunch activity. I ate on these for 4 days so be ready for some leftovers! These easy vegan sandwich fillings are now a staple in my house and can easily be made whole food plant based by making your own vegan mayo, although I am lazy so went with Vegenaise.
