Who said cooking needs to be challenging and time-consuming? Today I’m sharing 3 non-conventional yet cheap, healthy, quick and tasty vegan meals! SEE RECIPES BELOW ↓↓↓
RECIPE 1:
Filling:
– Fresh veg: 1 head of broccoli, 1 bok choy, 1 sweetheart cabbage
– Flavourful veg: Sun dried tomatoes + oil, olives, garlic
– Tomato passata, tomato paste and marmite
– 1-2 cans of beans of choice
– Recommended: herbs, spices, tahini, nutritional yeast
Stir-fry the vegetables and add sauce. Allow to simmer and thicken up
Wraps (6):
– 500 g wholemeal flour
– 250 ml water
– pinch of salt
Combine ingredients, knead for 10 minutes and then allow to rise for 30-60 min. Flatten out with a rolling pin and heat up in a pan before adding fillings
RECIPE 2:
“Tuna” (2)
– 1 can of chickpeas
– 3 medium carrots
– Several sheets of nori
– c. 6 tbs mayonnaise
– Salt, pepper
Mash the chickpeas, shred the nori and grate the carrots. Combine the ingredients together.
Other
– 500 g fusilli pasta
– Frozen vegetables, pickles, whatever ya fancy 😉
Cook pasta according to package instructions and add frozen vegetables when it has 3 minutes left to go. Drain the pasta and combine with the tuna
RECIPE 3:
Cheesy sauce (2)
– 100g (soaked) lentils
– 3 Tbs cashew butter (or cashews)
– Salt, pepper, smoked paprika, nutritional yeast
– 2 Tbs Mustard
– Lemon juice (c. 1/2 lemon)
– Plant-based milk
Combine all ingredients and blend! If the sauce is too thick, add more plant-based milk.
Other:
– Potatoes
– Carrots
– Cauliflower
– Mock meat/bean burgers
Make and/or prepare your mock meat (package instructions!). Boil potatoes, carrots and cauliflower before combining everything together into a wonderful mush 🙂
