Hey guys! Today was a busy homeschool day, so I made a super easy and delicious dinner – King Ranch Casserole! This is a little different than the classic version, but it turned out so good! Definitely a new family favorite dinner!

King Ranch Casserole:
– 10 Corn Tortillas
– 8 oz. Shredded Cheddar
– 4 Oz. Shredded Oaxaca Cheese (Or Monterey Jack)
-1 Can Diced Green Chiles
– 1 Can Mexican Hot Style Tomato Sauce (Or Rotel)
– 1 Can Cream of Chicken Soup
– 1 Can Chicken Queso Blanco Soup (Or Cream of Mushroom)
– 1 C. Chicken Broth
– 2 Tbsp. Sour Cream
– 1/2 C. Frozen Sweet Corn
– To Taste:
Salt & Pepper
Garlic Powder
Onion Powder
Adobo Seasoning (Or Chili Powder & Cumin)
