The perfect β€˜Buddha Bowl’ 🍲

Indulge yourself with this guilt-free, wholesome combo of iron-rich black chana, oregano massaged grilled zucchini, vibrant crunchy slaw, soft boiled egg, vitamin-rich wilted amaranth and probiotic yogurt dressing to complete this bowl!

Ingredients:
For grilled zucchini slices
Zucchini – 1 no
Lemon juice – 1 tsp
Black pepper – 1 tsp
Salt – 1tsp
Olive oil – Β½ tsp

For boiled chana mixture
Oil – 1 tsp
Chopped garlic – 1tbsp
Boiled chana – 1 bowl
Salt – 1 tsp
Black pepper – 1 tsp
Chopped coriander – 1 tbsp

For grilled zucchini baton
Oil – 1 tsp
Chopped ginger – 1 tbsp
Salt – 1 tsp
Chili powder – 1 tsp
Cumin powder – 1 tsp
Chopped garlic – 1 tsp
Lemon juice – 1 tbsp

For salad
Chopped mint – 1 tsp
Carrot juliennes – 2 tbsp
Beetroot juliennes – 1 tbsp
Onion juliennes – 1 tbsp
Chopped coriander – 1 tsp
Salt – 1 tsp
Lemon juice – 1 tsp

For amaranth mixture
Oil – 1 tsp
Chopped garlic – 1 tbsp
Amaranth – 1 cup
Sesame seeds – 1 tsp
Black pepper – 1 tsp
Salt – 1 tsp
Lemon juice – 1 tsp

For dressing
Thick curd – 2 tbsp
Salt – 1 tsp
Red chili powder – 1 tsp
Cumin powder – 1 tsp

Method
For grilled zucchini slices
Cut half zucchini slices and apply lemon juice, black pepper, salt, and olive oil.
In a grilling, pan pours oil and grill the zucchini slices.

For boiled chana mixture
For chickpeas in a nonstick pan heat oil and add chopped garlic then add boiled chana, salt, black pepper, chopped coriander, and saute it.
For grilled zucchini baton

In a bowl take a zucchini baton and then add chopped ginger, salt, chili powder, cumin powder, chopped garlic, lemon juice, and mix it well.

In the grilling, pan pours oil and grill the zucchini baton mixture.
For salad

Chopped mint leaves and in one bowl add chopped mint, carrot juliennes, beetroot juliennes, onion juliennes, chopped coriander, salt, lemon juice and mix it well.
For amaranth mixture

In a grilling pan heat oil then add chopped garlic, red amaranth, sesame seeds, black pepper, salt, lemon juice and saute it.

For dressing
In a bowl take thick curd and add salt, red chili powder, cumin powder, and mix it well.
For final plating

In a white bowl put dressing first then on top of that place boiled chana mixture, then grilled zucchini, and followed by grilled sliced zucchini and on top of everything add the salad and boiled egg and your buddha bowl is ready to enjoy.
