I’m going to share 3 easy and healthy crockpot recipes with minimal ingredients (5 ingredients) – plus I’m going to share a bonus recipe made with leftover ingredients. I love slow cooker recipes! They make it easy to get a delicious dinner on the table with little effort! Even better – these recipes are healthy and budget friendly!

Recipes are below:

Crockpot Enchilada Chicken:

5 Ingredient Chili:
1 lb ground beef
1 yellow onion, diced
1 packet chili seasoning mix
1 can chili beans
1 can tomato sauce (15 oz)

In a skillet, cook beef and onion until beef is cooked through. Drain fat.
Add beef/onion mixture to crockpot.
Add chili seasoning, tomato sauce and beans to crockpot. Stir to combine.
If you like your chili thinner, add up to 1/2 cup water.
Cook on low 4-6 hours.

Salsa Verde Chicken:
1.5 lb boneless chicken breasts or tenders
2 T cumin (use less if you don’t want the taste to be too “earthy”)
sprinkle of garlic powder
1 sliced red onion
1 jar salsa verde
cilantro to garnish, if desired.

Add all ingredients to crockpot. Cook on high 2-4 hours or on low 4-6 hours, until chicken is done. This would be great in tacos!
