Ingredients for Boiled Potatoes:
Potatoes (cubes) 1 ½ cup
Boiling water as required
Salt 1/2 tsp / to taste
Ingredients for Boiled Red Lentils:
Red lentils 1/2 cup
Boiling water as required
Salt 1/2 tsp / to taste
Ingredients for Glazed Beetroot:
Beetroot 1 cup
Honey 2 tbsp
Ingredients for Grilled Cauliflower:
Cauliflower 1/2
Ingredients for Vinaigrette Dressing:
Vinegar 1/4 cup
Oil 1/2 cup
Mustard paste 1 tbsp
Salt 1/2 tsp / to taste
Black pepper powder 1/2 tsp / to taste
Ingredients for Cheese Crisps:
Mozzarella Cheese (Shredded) as required
Ingredients for Assembling:
Boiled Potato cubes 1 ½ cup
Apple cubes 1 cup
Boiled red lentil 1/2 cup
Grilled cauliflower
Vinaigrette dressing as required
Black pepper powder 1/2 tsp / to taste
Salt 1/2 tsp / to taste
Glazed beetroot 1 cup
Carrot shavings as required
Cheese Crisps as required
Parsley (chopped) as required

Directions for boiled potatoes:
1. In a pot heat water, salt, potatoes and bring it to boil. boil for 10-15 mins or until fully tender.
Directions for boiled red lentils:
2. In a pot heat water, add red lentil, salt and boil for 3-4 minutes or until 80% done. Set aside.
Directions for Glazed Beetroot:
3. In a pan heat honey and add beetroot. Cook for 3-4 minutes, take off flame and let it cool at room temperature.
Directions for Grilled Cauliflower:
4. Grill cauliflower on flame until fragrant. Set aside.
Directions for Vinaigrette Dressing:
5. To prepare vinaigrette dressing, add oil, vinegar, mustard paste, salt and whisk well.
Directions for Cheese Crisps:
6. On a silicon mat, spread grated cheese and microwave for 2 minutes. Now let it rest at room temperature for 5 minutes or until crispy.
Directions for Assembling:
7. In a large bowl add boiled potatoes, apples, lentils, cauliflower, vinaigrette dressing, salt, black pepper and mix well.
8. Transfer it to serving bowl, top it with honey glazed beetroot, shaved carrots and cheese crisps.
9. Your protein salad is ready. serve and enjoy.
