Spicy Yams Recipe – A Healthy Way to Cook with Coconut Oil

Growing up, i only ate Yams during Family Holiday Dinners which typically involved Mushy, Baby Food-Ish orange goop mixed with canned crushed pineapple and topped with burned marshmallows. Let me tell, Yams don’t have to be so Painfully boring, and disgusting, and can actually taste good and be very healthy! Especially when they are SPICY! (applause!)
So, here we have 3 washed and chopped Yams to serve 4 people – and since having a baby in the house, I’m defaulting to calling them Jams for some reason… Right Averi?… You want to keep the slices kind of thin… I cut them up too large last week and they just take forever to cook.

Mince or press 4 fresh garlic cloves and mix it with 1.5 tablespoons of coconut oil.
warm up the oil on the stove just a bit to get it to a liquid state, and pour it on the Jams.
on the side, mix up
1/4 teaspoon cayenne pepper (applause)
chopped, fresh basil 4 leaves
sea salt 1/4 teaspoon
pepper 1/4 teaspoon
paprika 1/2 teaspoon
oregano 1/2 teaspoon

Cover them up with Foil, and Bake at 350 for 45min, stirring at 30 min?

These are kind of like sweet Potato fries… except they are Jams, not fried, and these are much better for you. The heat from the cayenne pepper and flavor of the other herbs perfectly compliments the sweetness of the Jams. I think you will find these yummy, and a great recipe to add to your list of regulars in your healthy, active lifestyle… which leads me to my question for you – why did I use coconut oil to cook these Jammin Jams today?
