Preparation
Heat the pan and pour in 10 ml of oil. Put in 15 shallots, 25 gms of ginger and 25 gms of garlic and saute thoroughly. Put in 150 gms of Eggplant pieces which were soaked in water for 2 hours. Dip the sandwiches in the egg mixture and put it in the pan and fry for 45 seconds on each side before turning to the other side. Do this for a total of three minutes or till the sandwich turns golden brown. Take off the pan and serve
