Today I am excited to share with you another video on some of my favorite easy vegan meals I am currently eating for maximum weight loss on a whole food plant-based diet. These meals are also oil-free as always. Some of you may be familiar with Dr. McDougall and his books, The Starch Solution and The Program for Maximum Weight Loss where he recommends eating a very low-fat diet for weight loss, but I just want to point out that I have always included fat in my meals for my health and overall satisfaction. You can obviously omit if you’d prefer. These meals I show you today do not have much overt fat added, but some ground flax seeds would be a great addition to the polenta and I love to add 1/4 – 1/2 of an avocado to my chili.

Polenta –
1/2 c polenta
2 c water
pressure cook for 8 minutes
1/2 bag frozen spinach
fresh tomatoes
Low sodium soy or tamari and nutritional yeast to taste
4 Blean Chili –
Chocolate Peppermint Oat Bake
1/2 mashed banana
1/2 c oats
1 tbsp maple syrup
1tbsp unsweet cocoa powder
1/2 tsp vanilla
3-4 drops of peppermint
1/2 tsp baking powder
pinch of salt
1/4 cup unsweet plant milk
Bake at 400 for 20 mins or until cooked through
