Ingredients
4 ripe bananas
2 tsp nutmeg
2 tbsp dark chocolate chips
3 tsp cinnamon
1 tsp salt
1/4 cup erythirol or any sweetener of choice
1/4 cup coconut oil
1/4 cup coconut milk
2 and 1/2 cups almond flour
1 tsp xantham gum (optional)
2 whole eggs
Vanilla and banana essence
2 tsp baking powder
Preparation
1. Preheat oven to 120c.
2. Combine almost all dry ingredients (almond flour, baking powder, cinnamon, xantham gum, nutmeg, salt) together and whisk together till there are no lumps.
3. In a separate bowl, mash bananas, add sweetener, eggs, vanilla and banana essence , coconut oil and coconut milk and combine.
4. Combine the wet and and dry ingredients and mix together till there are no lumps.
5. Grease a loaf pan with butter or oil and line with baking sheet then transfer the banana bread mixture.
6. Top with chopped almonds and dark chocolate chips.
7. Bake on 120c in the middle rack for about 1 hour till completely cooked. Use toothpick to check when the banana bread is done, it should come out clean when poked through the bread.
Serve with green tea or with eggs and sausage for a healthy wholesome treat!
