I am going to teach you how to make pumpkin paratha today. Well, it is going to be easy. I have some cut pumpkin. The main ingredient is the cut pumpkin and you need to put very little water in it. So just a tablespoon or two and it will boil its own steam. Now I will add some salt, some white sesame, and some Ajwain. I will blend this all together in my atta and we will make pumpkin paratha.

After roasting all of it and cooking the pumpkin you can message with your hands or blend it in the blender and then I add it in my atta. Now I get asked a lot about what atta to use? You can just blend a few things in your atta. Now this atta has some Soya flour and it also has two scoops of all plant protein. You can use different attas but I guess a blended version of good whole grains is a good idea.

You can you some flax seed powder in it, some almond flour in it or you can experiment with different blends of atta. As you keep experimenting you will realise what works, what brings you the best. I will just recommend don’t use plain maida or plain wheat atta. Use some good ingredients and good flour in it too and you will get soft tasty rotis. So you see I have blended the pumpkin, the flour, Ajwain, and the sesame seed together and I made this nice, soft dough. Then I will have roti as I will make it into small balls and it doesn’t have to be round.

My roti making style is different from yours but you make it thin, thick, whatever. Remember for the recipe, be creative and start adding new things in your atta. Sometimes I put spinach instead of pumpkin or sometimes I put carrot instead of pumpkin . Another time I had sweet potatoes instead of pumpkin. So the rotis were a bit sweet so we had to eat it for breakfast. So be creative and put in some seeds of different types of things and you will find that making roti is actually not very difficult actually.

You can make it in your kitchen. Now you roast the roti as you like it. Maybe you want to roast it on the fire or on the pan. But roasting roti is a personal choice and you do it how you want to do it. So I prefer a pan. I put some ghee on the paratha after I roasted it.
