BOLOGNESE STUFFED AUBERGINES

Hi guys, welcome to Marks Irish Kitchen, where i make family friendly recipes that everyone can enjoy. Todays video is for aubergines stuffed with a Bolognese sauce. This low carb dish is healthy, full of vegetables and really simple to make. This is a wonderful meal for anyone on a keto diet or just looking to cut down on the carbs
INGREDIENTS (serves 2)
400g low fat mince beef
1x 400g tin chopped tomatoes
1 tablespoon olive oil
1 onion finely chopped
2 cloves garlic crushed
1 carrot finely diced
1 red (bell) pepper finely diced
1 stalk celery finely diced
450mls good quality beef stock
1 tablespoon tomato puree
1 small aubergine
50g grated parmesan cheese.
METHOD
Spray a large frying pan with low calorie cooking spray
Add the onion, garlic, carrot, celery and pepper. Cook for about 5 minutes until the veg is startting to soften.
Add the beef and mix well, breaking up any lumps. Cook for another 5 minutes.
Add the tinned tomatoes, beef stock and tomato puree. Bring to the boil and reduce the heat and simmer for 40 minutes
Cut the aubergines in half, score some cuts into them using a sharp knife, spray with low calorie cooking oil.
Preheat the oven to 200c (180c fan) and put the aubergines in for 20-25 minutes.
Remove the aubergines from the oven, carefully scoop out the flesh and add it to the Bolognese mix
Add some torn basil leaves
Spoon the mixture into the aubergine halves and sprinkle over some parmesan cheese
Return to the oven for 20-25 minutes until fully reheated.
