Sausage, sage and onion omelette

Hi guys, welcome to Marks Irish Kitchen, where i cook family friendly recipes that everyone csn enjoy. Todays video is for a pork sausage, freshly chopped sage and onion omelette. This is a simple, but really tasty dish that can be served with bacon or toast for breakfast. Its also great with a little salad as a lunch dish or as a quick supper dish.

INGREDIENTS (serves 2)
6 good quality pork sausages, cooked cooled and sliced
Low calorie oil for cooking
25g butter
1 onion finely sliced
1 garlic clove crushed
4 medium eggs
2 tbsp English mustard
2 tbsp chopped sage leaves
Salt and pepper for seasoning

METHOD
Cook 6 pork sausages in oil, in a frying pan until fully cooked. Put to the side and let cool. Once cool, slice into bite sized pieces
Add the butter to the pan on a low to medium heat, let the butter melt and add the onions and garlic.
Sweat the onion and garlic for about 15 minutes until soft but not coloured
In a bowl, mix the eggs and mustard and season well.
Pour the egg mixture over the onions and garlic mix and let cook for 2-3 minutes untuil the bottom of the omelette is starting to set and come away from the side of the pan.
Top the omelette with the cooked, chopped sausages and the chopped sage leaves.
Place under a hot grill and cook until the eggs start to go firm on top.
Leave for 3-4 minutes and serve with some toast or bacon on the side.
