Today, I’ll show you how to make a chipotle copycat chicken burrito bowl at home. This is an easy and delicious recipe that is perfect for make-ahead for lunch. My goal is to help you eat well and live better with easy and delicious weekly recipes!

✔Ingredients –

✔Chipotle Copycat Burrito Bowl
For Marinade: For the chicken
• ¼ medium red onion, roughly diced.
• 2 cloves garlic roughly chopped.
• Fresh Lime juice from a lime
• Fresh Lemon juice from a lime
• 1 tablespoon chili powder
• 1 chipotle pepper in adobo sauce
• 2 tablespoons olive oil
• 1 tablespoon ground cumin
• 1 tablespoon dried oregano
• 1 tablespoon Sea salt
• 1 teaspoon black pepper
• 1/2 cup chicken broth
• 2 pounds boneless chicken breast or skinless thighs
• 1 tablespoon of garlic powder
• 1 teaspoon of cayenne pepper (optional)
• Marinade for 1-hour
For the Rice:
• 1 cups cooked rice (basmati rice)
• 3 Tablespoons of butter
• 1 bay leaf
• 1 teaspoon of salt
• 1 tablespoon fresh cilantro chopped.
• 1 tablespoon fresh lime juice from a lime
• 1 tablespoon fresh lemon juice from a lemon

For the Corn:
• 1 Can of golden corn
• ¼ cup of red onions chopped.
• 2 teaspoons of cilantro
• 1 teaspoon of black pepper
• Salt
• 2-tablespoons of Butter

For assembling the bowl: Black beans, cheese, sour cream, salsa, guacamole, and lettuce
