recipe #1: Vegan banana waffles

ingredients for about 3 waffles:

– half of a banana
– 63 ml plant based milk (I used almond milk)
– 63 ml soda water
– 1 tablespoon of birch sugar
– 1 teaspoon of vanilla extract
– 100g flour
– 2 teaspoons of baking powder
– 2 teaspoons of lemon zest

Mash the banana in a bowl – add the almond milk and the soda water and mix until combined. Next, mix the dry ingredients in a separate bowl and combine dry and wet. Grease your waffle maker with some vegetable oil, pour the batter on it and let it cook for 3-5 minutes.

recipe #2 Banana pancakes:

ingredients for about 5 pancakes:

– 1 large banana
– 2 eggs
– cinnamon for taste
– 2 teaspoons of baking powder
– 1 teaspoon of cocoa powder
– oats (I do it bye eye)

Mash the banana in a bowl and add 2 eggs. After mixing it together add the cinnamon, the baking powder and your oats and mix again until all is combined. Put your stove on medium high heat, grease your pan with butter and pour the batter in. Flip them when they form bubbles on the top and let them cook again for 3 minutes.
