Garlic Pickle is a spicy and flavorful accompaniment to your meals, any Indian meal. This #PoonduOorkai is made using garlic, tamarind, and red chilli powder. Make this easy #GarlicPickle at home with Cookd’s simple recipe and don’t forget to share your feedback with us!
Garlic Pickle Recipe:
Garlic (peeled) – 250 gms
Red Chilli Powder – 1 tbsp
Fenugreek Seed (Methi Seeds) (powdered) – A Pinch
Jaggery – 2 tsp
Curry Leaf – 2 Sprigs
Asafoetida (Hing) – A Pinch
Tamarind – 1 Lemon Sized portion
Water – 1 Cup
Gingelly Oil – ¼ Cup
Mustard Seed – 1 tsp
Salt – ¾ tsp
Cooking Instructions:
1. Soak the tamarind in a cup of water.
2. In gingelly oil, fry the garlic until golden brown and set them aside to cool.
3. Blend to a paste, retain a few whole cloves.
4. In the same pan, splutter mustard seeds.
5. Add the curry leaves, fenugreek powder, asafoetida and the garlic paste.
6. On a low flame cook this mixture until the raw flavour goes.
7. Add 1 tbsp of chilli powder and the tamarind pulp. Add the whole cloves, too.
8. Cook until thick and the oil begins floating on the surface, season with salt and jaggery.
9. Allow the pickle to cool completely before storing it in an airtight container.
