PROSO MILLET PULAO / KHICHDI
INGREDIENTS
• Proso millet – 1 cup
• Oil + ghee – 1 tbsp
• Few whole garam masalas – bay leaf / jeera / clove / cinnamom / cardamom
• Onion finely chopped – 1 small
• Green chilli – 2 sliced
• Curry leaves – few
• Ginger garlic paste – 1 tsp
• Mixed veges – 1 bowl [ carrot /green peas / beans /potato ]
• Salt to taste
• Sugar – 1/2 tsp [optional ]
• Turmeric pwdr – 1/4 tsp
• Coriander leaves + mint finely chopped – 1/2 cup
• Lemon juice -1 tsp
• Water – 2 1/2 cup
• Fried cashew for garnish
PREPARATION
Clean ,wash ,rinse and soak the millets for 15 mins .
METHOD
Heat oil + ghee in a cooker ,add the whole garam masala and let it splutter .[ don’t burn ]
Add onion + green chilli + curry leaves and fry till translucent .
Add ginger garlic paste and fry till raw smell leaves .
Add the veges and stir fry for a min .
Add salt + sugar + turmeric + mint + coriander leaves + lemon juice one by one and fry till leaves shrink.
Add the drained millet and mix well .
Stir and fry for a min .
Add 2 1/2 water and pressure cook upto 2 whistles till soft .
*** if you like mushy texture cook upto 3 whistles .
Allow the pressure to release .
Transfer to a serving bowl and garnish .
Serve hot with any side dish .
NOTES
1. This millet can be used instead of rice in any rice recipes .
2. You can also add tomato .
3. It is also known as common millet, white millet and hog millet.
4. It is rich in phosphorous, manganese, magnesium etc.
5. It helps anti-aging, nervous system, its useful for strengthening of bones, it prevents cardiac diseases, it helps to lower cholesterol, it decrease the risk of cancer, help to prevent gall stone.
6. Health-promoting phenolic compounds contained in the grains are readily bioaccessible and their high calcium content favors bone strengthening and dental health.-
