lentil soup 320 calories (1 serving)
Ingredients
1 tsp olive oil
1 garlic
1/4 medium yellow onion
1/4 medium carrot
1/4 medium celery
1/3 cup brown lentils
3 oz crushed tomatoes
1 cup low sodium vegetable broth
1/4 tsp cumin powder
1/4 tsp paprika
1/4 tsp ground coriander
1 bay leaf
salt and black pepper
1 tbsp lemon juice
parsley
DIRECTIONS
Heat oil in a large pot over medium heat. Add garlic and onion, keep cooking for 1 minutes.
Add celery and carrot. Cook until softened and the onion is sweet.
Add all remaining ingredients except the lemon. Stir.
Place lid on and turn heat down to medium low. Simmer for 15-20 minutes or until lentils are soft.
Remove bay leaf.
Add a touch of water if you want to adjust soup consistency. add lemon juice just before serving. Garnish with parsley if desired.
