Why do you discard half the sourdough starter?
Because I don’t want my starter to be sour. If you don’t discard, then the multiple yeast cells will fight for their share of food when you feed the starter. The food or feed will be consumed quickly and the yeast will become hungry quickly. If you starve your natural yeast for longer, it starts releasing a watery substance, known as hooch. It will make your starter sour. The lesser the amount of starter to feed, the higher the amount of food availability for the yeast to grow. The more hydrated the bread, the lesser the sourness. My focus is on baking a sourdough minus sourness, so I continue to harp on sour factor.
