Lectin Free Recipe Sweet Potato Salad Polyphenol Rich Healthy Quick Lunch Dinner Idea Paleo DELICIOUS and Easy

My Dear Friends I am so excited to share my wonderful recipe with you , please enjoy and let me know how you love it!!

RECIPE – SERVING FOR 2:

1. Bake or boil 1 large sweet potato until very soft – Once it is cooled cut into small pcs like in the video
2. Add 1 1/2 cup of organic leafy greens spring mix and 1 Cup or Arugula
3. Zest of 1 organic Lemon – and Juice of 1 lemon – PLEASE NOTE if lemon is big use juice of half lemon so it is not too lemony
4. 2 Table Spoon of unsweetened cranberries – if you can’t find it then get prunes, read the label – it should have only 1 ingredient dry prunes, no sugar added and no chemicals added

SEASON with Iodized sea salt and 4 table spoon of extra virgin olive oil
Mix everything well – (add walnuts at the end)
5. Decorate with 5 tea spoon of chopped walnuts and serve

The combination of sweet potato arugula leafy greens unsweetened cranberries walnuts lemon juice, lemon zest olive oil makes this salad very flavorful , and so good for you

Once sweet potato is ready it takes only 5 minutes to make this salad , just cut the sweet potato and mix it with the rest of the ingredients

You can bake or boil sweet potatoes on Sundays and keep them in airtight container in fridge up to 4 to 5 days, so you could make this salad any day of the week in minutes

There are 2 reasons why this salad is good for your health ?

First – reason Because of polyphenol content in in olive oil, sweet potato, walnuts, lemon zest arugula and cranberries
