This meal is not only easy, but also vegan, plant-based, free from oil, and delicious. It works well for lunch and dinner. I hope you enjoy it!

✨ Frontier Co-op Mexican Seasoning:
– Can’t find the seasoning and want to make your own. Here’s what’s in it: Chili powder, garlic powder, onion powder, paprika, cumin, oregano, cayenne pepper

✨ Recipe:
Sweet white corn
Frozen rice
frozen peppers
1/2 can – 1 can chickpeas, rinsed (BPA free can, low sodium or no salt added)
2 tbsp of low sodium soy or tamari – or however much you like
1-2 tbsp of Mexican seasoning – or however much you like
